I live in the Seattle area, and am need of transmission service.

I followed this link to see if I could adjust the bands in my transmission myself:

But got a little nervous.

Any reccomended mechanics or repair shops for older Saabs?

Any reputable transmission shop that does a lot of import work should be able to do the job no problems. Although you may be better off ordering the gasket and filter from eeuroparts.com or the like yourself.
