Now and then I see the odd copper gasket set for a classic 900 engine show up and I'm wondering whether there really are benfits to using copper head and/or exhaust manifold gaskets, along with any downsides to using them?

They should hold very high boost better, but some people reported trouble with them. I think the correct finish on the block and head is important, and differs from what you would use with a standard hg. Look at all the project threads on here, do you see anyone mentioning copper headgaskets?
I don't think they are worth the hassle. Maybe you should fit that intercooler before worrying about really high boost!
