Is there any documentation or proper way to remove the ES1 (or any radio) system properly. I heard that without the radio the car can't start?? I'm trying to install my aux-input, but i dont want to screw anything up.

The EHU is what you remove. It is behind the climate controls.

the icm is the gateway for all intents and purposes between your engine managment and instruments buses. the cim has to send the immbolizer disable command to the trionic and the icm is what handles that connection. there are ways to hardwire around it, but you lose a lot of finctionality within the vehicle.
