So I've been planning to do this upgrade and order from MP Performance but just noticed a slightly thicker version... if you use the pull down menu you'll notice "race" 25.5mm instead of the standard 22mm... any reason not to get this over the MP?

Not for your convertible. It will be too harsh. Also it is not for the timid. It will make oversteer.

Out of curiosity and my general knowledge, how does a rear anti sway bar contribute towards oversteer?

I plan on using it because I have a 24mm front. If you plan on getting the 25.5, I highly recomend upgrading the front to 24 instead of your stock 19.

I have the 25mm on my 5 door and love it as well, I am planning on upgrading to the 24mm front bar, when i get the whole kit from genuine, with poly's and everything
