I know the bolt pattern for rims on our 9-5's is 5-110 but dont they sell an adapter for that to make it possible to use 5-100?

You can use bolt-on adapters, but because they'll push everything out at least an inch, you would need a narrow (no wider than 7") wheel with super high offset to prevent rubbing on the outside. There is also some debate that using bolt-on adapters can shorten the life of wheel bearings, but it's one of those things that no one has ever really proven.
You'd be better off finding a single-drilled 5x114.3 wheel and having it either "filled and drilled" or "drilled and inserted". If you find a 5x112 wheel you like, you can just use PCD variation bolts to make it work.

itll push it out a whole inch? That seems like too much.. but maybe i should just buy the correct rims then.

It's not such a big deal to use adapters on a low offset car in combination w/ a high offset wheel because the adapter effectively puts you in the same place as you would be with the original lower offset wheel. It gets much trickier when you start out with a high-offset vehicle and then use an adapter with a high offset wheel. I sell wheels for a living with the world's largest wheel manufacturer and I see people do all sorts of wacky things to get wheels to fit, including adapters. Honestly, I wouldn't bother with it unless you have a vehicle that is just incredibly difficult/impossible to find wheels for. Some examples include the Audi All-Road, which is 5x112, but low-offset. Another one is RWD Volvo's, which are 5x108 with low offset.
