Just curious, I am going to go to some open tracks and figure it'll be a cool chance to try some wacky exhaust configs!

It will be pretty loud. Raggy has done this, I think....
Many open tracks have dB limits, so you'll need to watch that.
Try a high performance cat. Or just fit it with an exhaust cutout, then you can be legal most of the time!

I've left the cat in; the rest of the system is a standard bore with straight through silencer boxes. It's noisy at the extreme and apparently I've got a nicer note than the much vaunted burble of the T16s and other old cars. I've not tripped over the noise threshholds on any of the circuits I've used. I do have a lot of induction noise at high rev/load; apparently the V6 when allowed to breath does sound like a race car when really ragged along.
