Is there a way to safely disconnect the turbo on a 2001 9-5 so that the exhaust doesn't smoke so much? we know for sure it's the turbo, not the head gasket (hooray) and we're ordering a rebuild kit, in the mean time it's pretty embarrassing to drive.

Not really. Not without doing a whole bunch of custom intake/exhaust work which would cost way more than just replacing the turbo with a new one.
Also, this is the wrong forum. This forum is for the new gen 9-5. If you look down a bit in the main list you'll find the old gen 9-5 workshop and performance sections.
Good luck with the turbo rebuild, make sure you get it balanced properly! In the mean time enjoy your lack of mosquitoes (and feel free to bill the city for your services)!
